So you mean a scanner that could scan the text from a book without opening it!?
That would be pretty amazing technology, and I seriously doubt such a device exists today, It would have to rely on something like x-rays that can penetrate the paper but would give some contrast to the ink on a per-page basis. Even worse that it could provide contrast between each pair of pages which face each other when closed.
If you invent something like that which actually works, you could make a lot of money.

You're reading Scanners that only scan up to two pages at a time are therefore rather time-consuming to operate. Do any scanners exist that can penetrably scan through an entire closed book? Where could I buy one?
