Personal opinion is unless you want archives of specific dates etc use a removable hard drive. Dirt cheap these days, easy to use, less chance of getting lost, scratched or eaten.
I have a awful relationship with discs (always have lol) and prefer the hard drive option.
As for selecting files I am sure there are a million and one programs out there to select recently amended files (Nero did it I am sure, Pinnacle had a backup system as well). Many removable Hard drives come with built in software to do it and I bet there are loads of free open source options as well.
The same way you back up files to a CD-R. You put a blank DVD-R in the drive (assuming your drive can burn DVDs) and use your favourite burning software to create a job and drag and drop the file / folders you want to burn, then go. I Use CDBurnerXP. Don't let the name fool you - it does DVD too. Free and easy to use.

For the record, it's perfectly fine to put data on a DVD. It has more capacity than a CD.

you could back up to dvds...but it would be better in my humble opinion to back to a portable flash drive...like 100 GB or bigger. USB connection...works great.
