I think you should determine that by who is right hand and who is left hand. Whichever you are will determine how fast you can act.

Left side should be the better passer because, the person who isn't passing can run up to set, and so he/she is closer to the setting position. Good Luck!

It really comes down to which player plays better on each side. If you watch folks on the AVP tour you will find that sometimes when they switch partners, they will end up playing a different side then they did with the last partner because thheir new partner might be a stronger player on one side vs. the other. When first learning to play sand doubles it's better to do what one of the other folks stated (switch sides each serve) to help you become a more rounded player; however, you won't see the pros do this.
