butternut squash soup is really good, just go to epicurious.com and search for it, or for that matter, go to the site and just search "butternut squash". they'll have tons of recipes and they're usually very delicious
My mother came up with the idea of peeling it, cleaning it, dicing it and sauteeing it in butter or oil. It's delicious that way.
You can boil it in chicken stock with potatoes, turnips, parsnips, carrots, and whatever root vegetables strike your fancy. When it is tender, puree it and season it (I use salt and either parsley, thyme or margoram). It is good hot or cold. You can put a dollop of cream or sour cream in the middle like vichysouis.
You can clean it and bake it skin side down with butter, brown sugar and cinnamon in the hollow.
You can clean it and bake it skin side up with a little water in the pan to steam it.
You can boil it, puree it and make pumpkin pie or pumpkin pudding from it.
You can stuff it with sausage and bread crumbs and bake it.
You can substitute it for apple in apple butter and make a really nice pumpkin butter.
You can boil it and mash it with butter like potatoes.
Butternut squash ravioli served with a browned butter sage sauce with walnuts is awesome.
And another favorite of ours is to roast halved squash and 1/2 dozen pears with olive oil in a not oven and then use both of those in a butternut squash soup. It's terrific. The roasting and the addition of the pears really takes it to another level.
Well, since Sydney already said 'soup,' I;d like to offer b-nut squash souffle, which is so much easier than it sounds! You just need to remember: always use a straight-sided *ceramic* dish and ALWAYS butter the dish ;-) (Everything is on epicurious or recipetzar.com)
