Wooden floors do not like having any sort of liquids spilt upon them - period. Wood is porous so it would need to be sealed both on the surface of the planks themselves as well as between the joins. As the comment above, the problem with a sealant is that the surface may become slippery and dangerous. The appearance of the floor may prove hard to maintain in such an environment with regular maintenance required (eg, you would not be able to wash down with hot water and disinfectant at the end of the day to remove bacteria that has accumulated upon the surface).
If it had a professionally poly seal it might not be too bad but it would be slippery and hard to clean over a long time. Plus I don't think it could be acceptable to code in the USA unless it had a water resilient surface.
Wood also collect bacteria and becomes a breeding ground for all sorts of little nasties even if strong cleaners are use since it's absorbs the liquids from the meat particles that are stepped on ...

wood absorbs liquids and odors. It would need to be sealed, but then it would become slippery.
It wouldn't be a problem if you bleached it everyday and sand it every few months.
