Pianists, dancers, conductors, and soloists will often turn to face the audience with a "ok, I'm done" look on their face. The lights will stop moving, turn white, or black out. Multi-thematic dances and musical pieces can be tricky because of little breaks in the music/movement, so it might also be a good idea to be a little familiar with what you are watching. I've avoided embarassment by listening to recordings what I'm going to see beforehand. It's also nice cuz it give you reference to what sounds wrong or right to you. Also makes great conversation during intermission when you're waiting in line for the bar or restroom.

JT answered better than I could - a very serious and, no doubt, gratified listener and active participant in the musical experience. Also - when in doubt, wait for others to clap first.
