If I pick a Banana Pepper early (e.g. Prematurely; green) is there some way to ripen it (make it yellow)? I heard you could put it in a brown paper bag with a real banana; is this true?

It will ripen over time. A lot of the fruit and vegetables that you get at the grocery store is picked green and allowed to ripen on the shelves so that they have more storage time. That's why they make such a big deal over (and charge you so much for)vine ripened tomatoes.
