Depends on my mood! Leftovers or just plain fruits and veggies, if I'm really lazy. If I'm in a tastes-good-bad-food-no-balanced-meal mood, I'll get out a bottle of Coke and ake a big batch of french fries in the deep fat frier, salt them up nice with some seasoned salt, get a small bowl of ketchup, and have at it.

Just put piece of Pita/Lafa bread in the oven, then wait for a couple of minutes shuffling! Then get cheese (white cheese, but two different types; yellow and white) and eat the bread too hot with the cold cheese!! (but in case of gouda/yellow cheese i prefer putting the piece of cheese inside/on the bread and put it in the oven, thus it'll melt on the bread like butter! yummy!)

Rice! Rice cookers are a great invention. http://images.google.com/images?hl=en&safe=off&q=rice+cooker&btnG=Search+Images Dump into cooker: Water Rice (rinsed) Oil (1 or 2 tbsp) Salt Let her rip. No attention required. The cooker knows when the rice is done. Do *not* stir. When it's ready I spoon it into a bowl and add "butter," soy sauce, garlic powder, and a shake of tabasco. <YUM> I buy organic brown rice in 10# bags. Forget white rice. It's mushy and tasteless.

I just pop a freezer meal into the microwave and go. Hamburger/Chicken/Tuna Helper is always a winner, too. Of course, my wife’s a full-time stay-at-home mom, so she handles most of the dinners while I’m hard at work sitting in front of a computer screen. ;-)

cold cuts, cheese and fruit..OR oatmeal... OR peanut butter on a banana

Almost all the meals I make for my family are pretty quick and easy, so lazy nights aren't much different. I'll sometimes do the Marconi Cheese or Top Ramen route. But a really easy meal is burritos. Just brown some hamburger, open a can of beans, use pre-shredded cheese (and lettuce if you like), dice a tomato and you're done. Sometimes I'll add a pack of Lipton's Spanish Rice, which cooks in 7 minutes. If I start that just before the hamburger, it's ready about the same time as the rest and makes the burritos a lot more filling. Or tuna casserole is also a pretty easy/fast meal. Boil a pound of rotini noodles, open 2 cans of tuna, 1 can each of cream of chicken, cream of celery and cheddar soup, a can of corn and add a handful of shredded cheese. Takes maybe 15-20minutes and most of that's just waiting for the water to boil, then the noodles to cook. Little effort involved and lots of left overs for lunch the next day.

Pour a box of stovetop stuffing in a casserole dish. Add the water. Throw some chicken over it (any kind of chicken will do) Squeeze barbeque sauce on the chicken and shove in the oven. Cooks in about 35 to 40 minutes at 400 degrees. Believe it or not, one of the easiest things to make (if you have the time for it to cook) is a Roast beef. Just salt and pepper it and cook it in the oven. Throw a couple of potatoes on the oven rack half way through.
