Sometimes I find certain shampoos and conditioners cause dandruff. I find that simple products are best and also avoid highly perfumed products. If I go to the hairdresser and she uses too many products (i.e. mousse, condtioner sprays, hairspray, etc.) I will get a bad case of dandruff. You may want to experiment with various products. Also, I try to take a comb and scratch my scalp with it all over to get rid of flakes and then apply some sort of nice oil to the scalp before shampooing. You can also rinse your hair with a vinegar and water solution after shampooing (then rinse this out after it sits for a few minutes.

Head and Shoulders is great, it's a good general shampoo as well so it doesn't have to be just for someone with dandruff

Along with Head and Shoulders, try putting some Shea Butter on the spots that seem more dry. Give it about 10 minutes before you take a shower. Helped my nephew in a week. Good stuff.
