Once I gave up on meat and became a vegetarian 9 years ago, I never though of any meat products again because my remorse for being the cause of their pain and suffering when I was on meat far outweight my desire for meat. That was in the first couple of years but as of now, I have not put a piece of meat into my mouth for a long time now and I can't imagine that I would dare to eat it now. It is like eating the meat of dead corpse cooked in spices! Yuk!
I'm on my way to becoming vegan. I don't think I'll miss anything. It's cruel what they do to animals to get the products. Even cows milk is not naturally made. They give the cows hormones to make them produce milk. It's terrible.
I quit eating meat two years ago and the thing I miss the most is the convience of food. Most fast food places aren't veg friendly and restaurants have few options, so I've became quite a pain to go out to dinner with.
Chicken, I eat alot of chicken.
I've been vegan for six years. Overall, the convenience of being able to eat without considering what it's made of... but then again, I'd rather be considering it than not.
For the first three years or so, cheese was the hardest to get over, but now the smell of real cheese grosses me out. I love vegan gourmet, or just nutritional yeast/margarine for a cheesy spread.
Now, every now and again I'll get a terrible craving for a vegan donut, and the only places I know of that make them are thousands of miles away (cry).
Cheese. There are decent vegan substitutes for eggs and milk(ish), but cheese... not from what I know.
Also, I'm a vegetarian, so I don't eat meat. I think the only thing I've missed since I've become one is Chicken Kiev.
I miss being treated like I don't need special accommodations. I had to bring bean burgers to a family gathering to keep my vegan diet inconspicuous.
I do care about the environment and needless suffering of animals, but not enough to constantly justify my eating habits to those who don't know what I do or simply don't care.
The food can be just as tasty if not more so. The hardest thing about the physiological part of the diet change for me was the adjustment to eating lighter foods. Before I started eating lots of cashews, nuts and seeds the meals would seem like they were missing something. Generally, animal products are heavier and stay in the digestive track longer thus giving one a sense of satiation.
I guess milk and chicken.
I was going to say the cheese on the pizza I get about once a month but some of the soy cheeses are yummy. :)
beef, lamb, chicken, pork not to mention the other products used in every day foods ie gelatin
I'd miss cheese.
I would miss the beef.
I'd miss milk the most. Then, steak would not be trailing far behind.

I would miss turkey. Although I have seen some things on the internet of how animals are treated before they are killed and it's very quickly turning me into a vegetarian! I don't eat red meat or any pork products, slowly but surely getting there...
Yogurt. I have to say, I don't even care about that anymore. I don't have any cravings for animal products. Yogurt used to be one of my favorite foods.
After eating liver and onions one night, I felt bad for the cow and having its organs harvested so I became a vegetarian. After that I went vegan. Then I went Raw. then back vegan. I would say I missed the texture most. You can fake most of the taste and more than make up for the protein. But the texture is hard to compete with.

I've given up eating red meat, sometimes I miss that.. especially when others are tucking into a juicy steak. But then I love fish, and I love vegetables.. so I'm certainly not short of options.

a nice juicy new york strip steak, grilled to perfection.
cheese, eggs and honey, honey. wouldnt be bothered about leaving milk as i dont really like it much anyways... but then i would find it hard to cope with out cake and other food products with these animal developed handies in. such as cake :D. and bread.. but i guess there are many other variations without these milks and so called eggs?! but yeah.. im veggie so i dont eat meat or fish already. .. horaaah. ! x:)
also.. fish roe.. that would be a biggy.! . :/
i'm trying to go veg-this is day 3 for me....turns out meat is one of the hardest habits i've ever had to break....i start then stop, start then stop. this time i am determined to stick with it though. i eat mostly chicken and ground turkey...but i'll miss the ground turkey the most-especially since i put it in everything; my spaghetti, chili, lasagna, etcetc...working my way around that is hard....

I have been vegetarian for nearly 3 years now, and the main thing i miss is seafood. I still enjoy the smell of bacon and still get hungry, but ive no temptation now
