Well, that really depends. It is actually hard to tell. But I would have to suggest how to find out. Stay up and time him. LOL. Kidding. I would have to say: They sleep as long as they want to.

It depends what kind of fish you have, but generally speaking fish activity level will be highest in the mornings and evenings, and will be lowest at night (unless you have nocturnal fish). Fish are coldblooded, so activity level will also slow down when the tank is colder.

As the water gets colder, the fish will grow weary, and the will either head to the top or the bottom of the tank for a sleep. They will also hit the hay when it is night, and all is still and dark. If they're is even a bit of movement in the water, the fish will wake up (unless the movement is constant, in case you have a filter). But basically, fish will sleep when they are tired :).
