I would second the snow peas, but since I moved to the south, right now it's Okra. they look cool and I love fried okra. I'd say on second place would be artichoke, but that doesn't do all that great either in this oven (Phoenix)

Corn or beans.

Tomatoes, because it's so hard to get a great tasting tomato from a store. We have terrific corn right from nearby fields and many other locally grown produce if I don't grow it myself, but you can't beat tomatoes that you chose the variety and grew right outside and pick when completely ripe. I also love to grow my favorite kinds of peppers.
