  • Also known as Mezcal. Mezcal is a Mexican spirit made from the agave plant. There are many different types of agaves, and each produces a slightly different mezcal. Agave is part of the Agavaceae family, also called maguey. Tequila is a mezcal made only from the blue agave plant in the Mexican region of Tequila.   • Tequila and Mezcal are made by distilling the fermented juice of agave plants in Mexico. The agave is a spiky-leafed plant that is a member of the lily family – not the cactus family as most people suppose. Under Mexican law Tequila can be made only from one agave, the blue agave and it can only be made in specific geographic areas. Mostly true Tequila is from Jalisco. The real stuff is sealed with a bar code to authenticate it –as is genuine Mexican Mezcal. Tequila marketing in Mexico says that “All Tequila is Mezcal but not all Mezcal is Tequila” – at is obvious when you have tried both of them in some quantity!
