  • You can add heat without raising temperature during the phase change of a pure substance. When a pure substance (water for example) changes from one state of matter to another, it must absorb energy. This energy goes into melting or evaporating the substance rather then causing a rise in temperature. Because this additional heat does not cause a change in temperature, it is called latent heat.
