There are some wonderful vegetarian refried beans and seasoned black beans out there. You can also make some seasoned brown rice. Make brown rice then add some salsa and black beans. This goes great in a burrito. Add cheese, sour cream, onions...whatever you would like. There are also several kinds of vegetarian "beef" and "chicken" products out there that make a great filler.

There is a vegetarian 'ground beef product that has 90+ grams of protien in a half-pound package...that is enough to meet the full daily protien requirement for four adults. It is ready to eat 'as-is' so you can add it to almost anything, seasoned any way...

I have made other dinner meals with it...you could substitute it for sauteed ground beef in any regular burrito recipe like this...

Are you a true vegan or can you eat white meat, if so. This may help.

Make some refried beans, we love using black beans. Cook up some rice. You might want to add tomato or lime zest and cilantro to it. Grate some jack cheese. And start with a flour tortilla, heated briefly over a flame or twirled in a hot pan. Layer all your goodies, add some guacamole, salsa, hot sauces, sour cream, other veggies, whatever you want. Roll and eat. If you fry it or brown it, you've got a chimichanga:-)
