Personally, I suggest not using boxed mixes for banana bread. Just buy the ingredients you need. They are usually cheaper than the boxed mixed anyway, and it will probably turn out better. The boxed mixes usually just have the flour and baking powder/soda and salt included. Just keep those few things on hand in your house and you can make a wide variety of things! You can subsitute other pans if you don't have the right size, but be aware that it will hold different amounts of batter/dough and it will bake faster or slower depending on the shape and size difference. For example, I would guess that the 9x9 pan full of banana bread would cook much faster than a loaf pan. You would have to watch it to see when it was done, and couldn't go by the time suggested in the recipe. You can also make banana bread muffins if you have a muffin tin - they would cook even faster.

banana bread is one of the easiest things to make ... primarily why i bought a bread maker years ago (really should dust that thing off and whip up something yummy)
