Any of them. I think I only watch the 3 main channels, FX and TNT
Anything PBS. Anything where they don't use English as a primary language. Oprah's channel, and though I don't get it now, I can go a very globally warm lifetime not seeing one second of the Al Gore mass hysteria channel. Though, I will admit, when we had Dish Network, I got a kick from that Free Speech TV. Had me laughing everytime I tuned in.
Plenty.. the sci-fi channel has become a joke.

I'm using DirecTV and am very happy with the service; I've heard complaints in my (very remote) area about Dish Network.
I like only about 20% of the channels, my wife likes another 20% but it still beats the cable we used to have when we lived in a less remote area.
In fact, we dropped cable sometime before moving here and went with DirecTV.
The new DVR really makes the difference; they weren't lying when they said it will change the way you watch TV!

I do miss the DVR I had with Dish Network. It took all the guess work out of viewing my favorite programs. Now with the switch over to DTV in February everyone will be paying extra in all likelihood.

The cool thing is that DirecTV is already digital so no change is needed. :)
The DVR is handy for me too; I don't watch a whole lot of TV anymore but it always has the stuff I want saved when I do.
Right now I mainly watch Dr. Who and Freaky Links. I have it set to grab Eureka when it comes back.
