One of my uncles used to be a dairy farmer. I got to spend a couple of weeks on his farm once when I was about 11. The cows usually came home in the mid-afternoon when it was getting about time for the evening milking.

When their udders are full and they want to be milked, a sensation probably comparable to having to empty your bladder. Human mothers who are overdue to nurse can hardly stand the internal pressure, and can also hardly stand the pain either of nursing or of expressing the milk. Presumably it's the same for cows, who will die unless they are somehow milked.

Its a built-in reaction for cows. they come home when there is inclimate weather coming, when they need to be milked, and of course when they are hungry. They do these for a reason: So you can say......G O T M I L K !!!

I asked my farmer brother this question and he said a) when they are hungry or b) when they want to or c)when the alpha cow heads to the barn.
-
john pennington and plinytheelder did a nice job of answering this question...But i would think primarily due to weather (cows have a good sense of weather), need of milking, or just 'cause the alpha cow spontaneously went home.
