    Yarnlady is happy every day

    Basic Instant Gluten (Seitan)
1/2 cup instant vital wheat gluten flour
    1/2 cup water

In a medium bowl, stir together the wheat gluten and water until it becomes elastic. The original directions say to knead for 5 minutes but I never knead it longer than 1 (out of pure laziness, but I like the texture better too). Cut into your desired shapes and sizes. I prefer patties.

    Faux Chicken
    2 cups water
    1/4 cup nutritional yeast
    2 tablespoons Bragg's liquid aminos
    1 teaspoon onion powder
    1 heaping teaspoon sage
    1/2 teaspoon dried thyme

In a medium sauce plan, bring all of the broth ingredient to a boil. Add prepared seitan into broth. Reduce heat and cover with lid. Let simmer for 50-60 minutes stirring every 10 minutes, until broth has reduced completely. (watch it closely I've had cooking times range from 20 minutes to 70 minutes). Use chicken immediately in your dish of choice or store in the refrigerator (for up to 6 days) or the freezer (for up to 6 months)

Fried "chicken breast" patties: dip in soy milk, then in spiced flour, back in the soy milk, and flour. Now place in hot peanut or canola oil for about 5 minutes. Serve with sweet and sour sauce, or barbeque sauce.

Spiced flour: use whatever are your favorite spices.

  • it's difficult to go cold turkey. you may just want to avoid meat a couple months to get used to it, then cut out animal products. when i went vegetarian, it took about 3-4 months before i stopped craving meat. i actually had some a few days ago to see if it would change the way i felt (checking my nuitrition levels i guess) and it did nothing for me. my fave product is veggie farm chik'n nuggets because they taste exactly like chicken. texture's a little off though...

In the frozen section of most grocery stores: BOCA chik patties or nuggets are really yummy. Or Morning Star....I like Boca...they're usually cheaper too. I don't like Wal Mart but I do go there once in a while to stock up on Boca chik patties cause they have the best deal of anywhere.

Chickens are VERY smart, social birds that make wonderful, loving pets...It is a horror that they are the most tortured animal on the planet.

Just check with your doctor, to make sure you're going about getting the proper nutrients without meat, please. Being a vegitarian is basically a diet. Humans are supposed to have at least some meat, but I understand there are additional ways to get the same benefits.

I'm a big fan of Quorn products. They are available in 7 different countries. Check out their website:

They even have some recipes there.

    Good luck!

I have to agree about the veg farm chikin nuggets. The key to trying new vegetarian foods is not to compare the the veggie product to its real counter part. Example: Turkey and Tofurky. I grew up in a vegan household, so my mom was always experimenting with substituting meat or dairy with soy or veggie products. Are you doing this for health, animal rights or for enviromental reasons?

Boca chicken patties (they are vegan)...if you crisp both sides in a pan, and eat it with barbecue sauce, it should help your craving. OOPS - disregard, I had answered this one already quite a while ago, but forgot.

Short video at www.thepracticalvegetarian.com shows you how to prepare t.v.p. which is ideal replacement for meat...basically you just add hot water and then shape it as you wish into patties or whatever.
Because t.v.p. is neutral in taste, you can add any type of flavoring; also, you can bread it, fry it, bake or broil it just like meat.

Try textured vegetable protein (t.v.p.); it is an ideal meat substitute and is also high in protein. You can fry it, bake it, grill it, or use it in any recipe you would use meat. Textured vegetable protein should be available in your supermarket but if not, you can find t.v.p. at a health food store or natural market.

There are loads of things that behave like meat on the pallet that are not meat.

Portabello mushrooms for one. Try roasting themin the oven...

Bread is also a filling option.

I love roasted veggie subs with hearty things like squash and sweet potatoes (which are actually considered by nasa to be the perfect food.)

I've never been a fan of vegetarian products that pretend to be meat. For the yummy fried elements that comprise the majority of what is so tasty about fried chicken, you can try the lovely South Asian dish, pakora, which is fairly easy to make yourself but is also available at numerous Indian take-aways.

I never did the fake meat thing when i was vegetarian - but i think you are looking for something that has the teture -crisp on the outside and fried. One of my fav dishes as a vegetarian was lentil croquettes.

Boil some red lentils until they go all thick and gooey. Add some grated cheese - again, you are aiming for a very very thick paste. Add seasonings.

Let the mixture cool - pop it in the fridge until it is cool enough to handle - and form it into sausage shapes. then dip in breadcrumbs, beaten egg and breadcrumbs again. Then deep fry until golden brown (about 5 mins). Then enjoy! Yummy!

That will be a problem if you are not eating eggs or cheese - but eggs can be justified as they are not fertilised, and there are cheeses which are not made with animal rennet. I found that I could only survive as a vegan for 6 months at a time, then i began to feel ill and get colds easily, so went back to eating eggs and other dairy products.

    Okies, here's the thing:

You are addicted to meat. Not in a physical sense, but in a mental sense. Ceasing eating certain craved foods is just like breaking any other habit.

Overcoming it is not a matter of exclusion ("Ugh, I CAN"T have ANYTHING!") but one of INclusion ("Wow, look at all of the awesome vegan foods out there!"). Instead of trying to REPLACE all of the things you're cutting out with vegan-acceptable "alternatives", get a great vegan cookbook and find some new favourites. The life of a vegan is NOT limited to salads and smoothies alone.

Hi It shouldnt be hard. tust think u are NOT putting into your tummy rotting flest, which is what meat is, a piece of dead animal, rotting from the moment it is slayed. It is also full of all sorts of bioaccumulationof chemicals fed to the animal to make it grow etc including growth hormones, anti biotics, steroids, vaccinations, pesticides etc etc. YUK!!Also u must feel spiritually healthier and in tune with God as u are not participating in harming his creation. u now have a longer life expectancy. Also u are not causing 3rd world babies to starve (we use their grain to feed out food animals). Plus less risk of cancers heart probs strokes etc. Vegan foods are good and healthy. Quorn is nice but contains dairy but is okay before the step to veganism

Stay away from the fried chicken. men should not eat friend chicken, according to GQ magazine.

    Instead, have baked or broiled.

The sea is full of fish.

Chicken and fish have been on my menu for the past 15 years, along with all the veggies.

Red meat is a killer. avoid.

I am healthier for it and owe it all to my wife.

It seems that the main ingredient in most fast foods are sugar, salt, and fat.
So that part would be easy.
    ------
I might get a reasonable facsimile of the 11 herbs and spices---assuming such have no meat products,
and try it on deep friend tofu.
    ------
As many South Asians are vegitarians, who know a thing or two about good cooking, herbs, and spices,
    you might consult them.
    ------
    Good luck.
In my view, chickens have it the worse in factory farms.

Sort of like hoping that a veggy burger will taste like hamburger.

In order to get the taste of chicken you would need to use chicken meat product like chicken stock.

The thing with not eating animal products anymore is that you actually have to give them up; the challenge of eating vegetarian is modifying what your body craves. Its a long and difficult process especially if fried, fatty, processed foods are the norm for you. If there were things that were passable substitutes for meats everybody would switch. If you want something yummy that you can deep fry try okra or squash or zucchini.

If you eat real fried chicken dont eat the skin and dont use BBQ sauce on it. BBQ Sauce is very high in calories. And the skin of a chicken has all its fat. I know hard not to eat the skin!!--Dont know of any fake look-alike chicken...sorry. Ever try to boil the chicken? I like it. It has a different taste but you get away from frying fats or oil. My girlfriend wont eat it boiled but shes fussy. Good Luck.

Quorn is a good healthy alternarive. You can get quorn in "chicken like" pieces, bits or whatever. If u look down the vegetarian aisles in the supermarkets u will come across all sorts of delights. But why do u want or need it to taste like chicken, which at the end of the day is simply a piece of decaying flesh from a tortured bird. U will feel better if u stop thinking of veg. foods having to taste like meats, though plenty do, but why not brance out into lots of KIND foods and their tastes. Good luck Vegetarian countries suffer much less disease than carnivorous peoples and they also have a longer lifespan expectancy.
