  • According to about.com, cream cheese was invented in 1872 in New York state. It was soon distributed en masse via Philidelphia Brand Cream Cheese, which would later become a subsidiary of Kraft foods, in 1928. Cream Cheese, as we know it, is not to be confused with the French Neufchatel, which was invented much earlier... in fact, there are rumors that Americans refused to eat it because it was "too French" (i.e. "wimpy") . The Neufchatel cheese was soft and perfumed and more closely resembled cake icing than cheese. But despite our self-proclaimmed ruggedness, cream cheese is one of the most highly consumed cheeses in America. Cream cheese is differed from Neufchatel in that cream cheese is considered a "fresh cheese" and is not ripened. It does, however, contain emulsifiers to lengthen it's shelf life, which is still quite brief. The creamy texture of the cheese is a result of it being air whipped and serves to make it perfect as a spread. Cream cheese, like most other American inventions, is reliant on technology such as the refrigerator and aluminum foil, and thus proves it to be a modern cheese for a modern age.
