A white one. That's because I envisage cowboys/girls to be in bright sunlight all day, just as they were in Western films, so the white of the hat would reflect the heat rather than absorb it.

I used to work for the PBR and there were some certain rules that were asked to follow, some due to sponsorships like genes were to be Wranglers or Carharts, shirts had to have a collar and long sleeves, boots mostly cowboy boots or work boots, and as for your hat goes, preferably black (Beaver hair) for the fall or winter, and straw or lighter colored hats for the summer.
