I'm not sure how big a knife you're looking for, but as an everyday tool I really like Ken Onion's "SpeedSafe" folder knives. They have a little knob that flicks the blade out quickly, a safety so the blade doesn't open in your pocket, a really nice, compact design, and sturdy blades. Kershaw sells a lot of his knives, and you can find them at a lot of outdoor stores. There are many good knives that meet your requirements. CRKT makes several very good knives that might fit your bill. Their EDC (Every Day Carry) knives feature stainless steel blades and zytel nylon scales for durability. Good solid knives that hold an edge well and are reasonably priced. Check out websites and stores which sell knives and see what you like. For keeping a sharp edge and shear blade strength, you can't beat a good quality carbon steel over stainless. What you envision using the knife fore will also determine what you should get. I never travel anywhere without my pocket knife. Good little tool with three blades that handles most small jobs. For larger uses, a fixed blade knife is hard to beat. Something with a strong, simple carbon steel blade that can be used to hack, slash, cut, carve, and pry. A K-Bar is a good example. Fancy knives, like double edged blades, are NOT designed with camping and hiking in mind and can be more dangerous than you would like when you try to clean a fish or cut a rope.
