Nuremberg was were the Nuremberg racial laws were formulated by the Nazis. These stripped the Jews of many of their rights and was key to the Holocaust. Nuremberg was also the place where many racist, anti-Semitic books, particularly children's books, were printed. The symbolism was very important to those involved, particularly the Americans. Nuremberg was also in the American 'sector' - Germany was divided amongst the Allies at this point - and for this reason it was chosen. Also, the courthouse at Nuremberg was one of the only ones still standing in the country! It should also be noted that the Russians wanted the trials to be held in East Berlin, perhaps to give themselves more control over the trial.

I don't know why specifically Nuremberg. But Nuremberg is not too far from Munich, which was the center of the Nazi government. I'm not sure if they went so far as to call Munich a capital, but it was definitely the center of the Nazi government and Hitler's place of residence. That's one possibility.
