  • Do you really mean like vinegar, or do you just mean that the acidity is too high (the wine tastes tart)? First, I'll assume that you really mean that it tastes of vinegar. 1) Does it smell like vinegar? If so, there is a major flaw in the wine, and you should return it to the store you bought it from. If not, then then problem is probably with you, not the wine. 2) Try tasting it unchilled. This will lower the apparent acidity. If you still taste vinegar, you might want to talk to your dentist or doctor. There are many health problems which affect your sense of taste. If you just mean that the wine is too tart for your taste, then you should start with a German Riesling (but not one that says Trocken on the label). These wines have residual sugar, which will offset some of the tang. As you get more used to the tartness of wine (and all better wines have relatively high acidity), you can ask your wine merchant to recommend wines that are fermented dry (no residual sugar) yet have relatively low acidity. You may just be afflicted with what I call a Coca-Cola palate. Too many sweetened soft drinks (especially diet soft drinks), milk and sugar in your coffee, not enough fresh fruit in your diet all conspire to make you more accustomed to sweet, low acidity flavors. Given the health benefits of wine and fresh fruit, and the negative health effects of the sweetened drinks, you may just want to wean yourself off sweets and onto healthier beverages like unsweetened fruit juice and unsweetened tea.
