Because they are dry. (The cakes themselves have been made a week or so earlier in some cases. This wicks out the moisture. Those that are made early and frozen, are usually much moister. My grandmother used to make wedding cakes, and made the cake part 2-3 days early. They were relatively good there, but there ARE those who do the cake part MUCH earlier. My grandmother also made the mints, and many of the decorations. (She made birthday cakes, too.) My ex-wife made a few for friends, and I believe she made them much CLOSER to the actual time... Like the night before. She'd sit and watch TV making the flowers the week before, but not the cakes. And now, with Fondaunt(sp?), I don't know WHEN they make them or it.

If i ever get married, we are going to have Little Debbie Cream Filled Chocolate cup cakes.

The main thing about our wedding cake was that it had to taste good. I ended up bringing it 600 miles from the bakery whose cakes I always liked to get the cake I wanted.

They way it looks, if its pleasing to the eyes, most people will never say a word. To be honest, get a few smaller cakes / dishes that you like for what they are, not how they look. Vanity is a deadly sin. (And I'm not even a christian) This comes from doing 100+ weddings a year and 10 years in the hotel business.
