While roasting is best ( 350 for 1 1/2 hour for two pounds beetroot), boil small beetroots for 30-40 minutes. Larger beetroots for 60 minutes. Source: http://www.oliver1.com/recipes/beetroot.htm

It all depends on their size. I usually buy medium size beets and boil them unpeeled in plain water for 45 minutes to one hour. Remove from water then scrape of skin and slice.
