Some foods like french fries taste better when you use Peanut Oil, while others foods I cook (egg rolls) work better with sesame seed oil. Some of my frying is done at high temperatures and I choose Canola oil which also is healthier that Olive Oil. Canola has both a greater effect on your HDL/LDL ratio, along with a higher smoke point when compared to any other cooking oil. Mexican food is best when fried in corn oil. Bar none. Spanish foods like yellow rice really benefit from the flavors that a good virgin olive oil brings to the palate. So really It all depends on what I am cooking and what kind of dish or food I am preparing.
