Look for low spready plants native to the area that normally grow along creeks and rivers. Angle the bank so that it is a gentle slope down to the water, and plant these plants on the angled area. If they grow and spread, they should hold the bank in place and prevent erosion.

I second the spready plants and seeds, but if it's a problem *right now* then get something like sod or something that will either biodegrade or not screw up the soil (so not, like, a roll of window screen that will rust) and use it to hold the banks. plant seeds, then plastic fencing on top, for instance.

Plant willows every thirty feet alternating the sides. this will meander the creek overtime, slowing it down. Plus after a couple of years, you can start harvesting willow branches.
