    When you bite into a ricecake, if it doesn't SNAP! but instead just kind of bends without breaking off, it is probably stale. My bag of ricecake has an "Best Before" date on it. I just got these last week and it reads "Best Before August 03 08". It's at the bottom of the back of the package.
