I know of two types. One is revolting to me, the other is Hawaiian sweet bread that is actually bread.

Like Nelson (romaine lettuce!) I much prefer the bread to the internal organs of animals.

The gland in the neck of a cow. A calf has meatier ones. As they age,the glands go more fatty. My family grew up eating them. They are hard to find, here,now.

Yes it's the thymus of a calf. And they can be quite tasty when prepared right. I didn't think I'd like them but they were good.
