Princess Cruises. I went on 5 of them.
Carnival Cruise Lines.
Lots of jobs on these cruises. You will need to sign a contract and from what I've seen, newbes get to do anything the bosses want.

Just go to the website for the cruise line and look for the employment section. When I worked for Norwegian Cruise Line, I applied directly through their website. It took about 9 months of applying over and over but I finally got a phone interview and was hired. I got hired into the dive instructor position in the Shore Excursion Dept. and started at $2000/month. After a year I was raised to $2250/month. Doesn't sound incredible but I had no expenses while onboard (food, rent, gas, power bill, etc.) so all of the money could go into savings. It's really an incredible way for a person to get to see the world. The hard part is getting one of the cool jobs. :-)
You need to go to the cruise line web sites and look for their links to jobs, employment, human resources or some such link that will give you information about their positions. Some sites even have current vacancies they are recruiting for. Several cruise lines have new ships coming out soon so opportunities will be there. Royal Caribbean, Celebrity, Disney and some others will have new ships launched in the next couple years.

There are a number of agencies that are hired by the different cruiselines to fill their jobs. There area also jobs with concessionaires (companies that run services on the ships).
LVHM Group runs the stores on many cruiselines. They look for personel via their website at http://www.starboardcruise.com/
Steiner runs the spans on many cruiselines. They took take applications via their website at http://www.str.co.uk/home.asp
There is a list of agencies at http://www.cruiselinesjobs.com/eng/recruitment/
Very few of these jobs are of interest to Americans because citizens of the US must pay income tax on the income on the ship (unlike most others).

Would you rather go on a 7 day cruise with 5 ports or a 10 day cruise with 2 ports assuming the cost was the same.
