I think it is originally a Belgian food. I don't know if a particular person invented it though.

No one invented them. They were common very thin wafers cooked in an iron grid so they would bake quicker. They were already popular in the Middle ages. Belgium developed it's own kind of waffles and were the first to make them the thicker kind with bigger holes. Waffles came to America in the 1600s.

Waffles have been around since at least Greek times no one really invented them. Early Dutch settlements in the Delaware area first introduced waffles to America. On August 24, 1869 Cornelius Swarthout got the first patent for a waffle iron in the U.S.
