According to linguist Dr. Steven Pinker "Toronto Maple Leaf" is a headless compound which means neither "head" symantically describes the object. A Maple Leaf in this case describes a hockey player and not actual foliage. This can be seen with a word such as sabretooth, which is a prehistoric cat and not a type of tooth. The rule for pluralizing such nouns is to add an S as opposed to giving it the otherwise irregular ending.

    Examples:

    Sabretooth - Sabretooths (not Sabreteeth)

    Lowlife - Lowlifes

It seems to make sense that they spell their name that way to show that each player is a leaf. By saying they're leaves, it sounds like each player is a bunch of leaves. This could be, or it could be that the person who started the team was bad at spelling... ;)
