Perseus killed Medusa. The other Gorgons were immmortal.
In his 12 labors Hercules kills:
the Lernaean Hydra
the giant Antaeus
the monster Geryon
the monster Ladon (in some versions of the story)
the Nemean Lion
the Stymphalian Birds (well, most of them - the rest fled never to return)
a herd of drunken centaurs
the Amazon queen Hippoylte
Diomedes (a mortal man, but thoroughly monstrous in character)
and the eagle that tormented Chiron (who had taken Prometheus' place)
In his labors he also captures/steals:
Cerberus
Diomedes' mares
Geryon's cattle
the golden hind of Artemis
the Erymanthian boar
and the Cretan bull
Also, in some versions of the Thesseus legend, Hercules helps him kill the Minotaur
Though I am not positive, he could have killed Medusa, or some general gorgon.

He also killed Nessus, the centaur who tried to rape Herc's second wife Deianeira.
