People like to argue because they want their opinions and views to be validatated and tune out any discord.

Bottom line: They don't want to hear the other person's views because they want only their views to be known.

Maybe they instantly feel they are being attacked and it is a defense mechanism as stated above its like a control or "devils advocate" position to argue. Or they are trying to change the subject and situation by making it uncomfortably an argument.

they are living with 'oppositional-defiance' disorder.
they like the adrenalin rush of any conflict situation.
    habit.
they had that as a role model growing up.
they like to get a rise out of you.
they are playing the devil's advocate.
they don't realize that that's how they are perceived.
they like the cut and thrust of debate regardless of who takes which position.

the answer would be different depending on the person engaging in this behaviour.

My experience has been because they simply and egocentrically believe they "Know best" and alot of time I find they use really broad statements and actually have a rather narrow set of experiences to draw on. It's so counter-productive!

A person who does this is most likely already convinced that he or she is right, even if he or she is not.
