Strange question. You know how most Chinese buffets have mandarin oranges on the dessert section that have absolutely no skin on them it's just the juice "sacks", well, do they have a machine that removes all that or what?

    I think it is done by hand. Mandarins are not difficult to skin, after all.
    They are very important as they signal the end of the feast and time to go home.
