How do I keep the bottom of my biscuits from burning?

    I invested in some good silicone pads and they are awesome !!! When I made cookies without them , they would all too often turn too brown on the bottom. Since using the Sil-Pads, that problem has been almost totally eliminated. They turn out perfect !! I'd be willing to bet, they would work great for biscuits too.

    All the above are great suggestions. Coincidentally, I am making cookies right now (oatmeal chocolate chip!). I have tried various methods, but finally solved the problem by just using 2 cookie sheets one on top of the other. The cookies cook perfectly and no more burnt bottom! I read it in an amazing cookbook. Try it and you will see for yourself!

    You are either cooking them at too high a temp, which I think is very hard to do. Or you are cooking them too long. First get a thermometer and check to see if your oven is actually the temperature you are going for. I set mine to 425° F. And I only cook them for about 12 minutes, possibly 14, no more than that. I use one of those insulated cookie sheets so it's hard to over-brown the bottoms (It's still possible, though lol!) Be sure your oven rack is in the middle of upper third.

    I have a pizza stone from Pampered Chef that I SWEAR by. Nothing burns on stoneware ^_^

    unless, of course, you REALLY overcook it ^_^

    Try moving the oven rack up a notch. A lot of ovens don't heat evenly.

    First, don't use a dark pan, especially an older cookie sheet that is dark from use. And pick up some of that reynolds non stick foil. I use that all the time and nothing sticks or burns on it.

    Use plenty of oil/grease on the pan and don't use too high heat in the oven. It takes practice.

    You may need to try a different pan. Certain pans cause them to burn.

    I use whole buttermilk and whole milk, and then I spoon the biscuit mix out onto parchment paper, top each biscuit with a pat of real butter, and bake them for 15 minutes on 375. Golden brown, every time.
