    Gassing a tomato is the practice of using CO2 to artifically add a red color to the unripened fruit. That is how you get the bright red baseball hard 'mato's into the supermarket where they slowly go soft as they ripen.

    The tomato's yummy flavor comes from ripening in the sun. That's why garden tomatoes are worlds better. Supermarket tomatoes are usually picked green and taste like cardboard with lots of acidity and none of the sweetness.
