How can you tell if a guy just knows the right things to say versus really meaning it?

well u know by if they look away they could be ashamed that means they are lying eye contact is every thing! (i hope this helped)

You can't really. You'll just have to get to know the person and see their pattern of response, or you will just have to trust them.

Only time will tell. If he truly means what he says, then his actions should correspond. Also, if he says the same thing later in the relationship as he did in the beginning, then it's probably true.
