Bypass? If you mean disconnect, there's a plug running to the compressor that you can simply unplug to prevent the AC clutch coil from energizing.
That would do it, just remember you won't have any dry defrost either as the compressor is used during that as well.

my 2000 buick century keeps blowing the 10 amp air conditioning fuse. the clutch kicks in and shortly after it blows. any ideas?
