Basically, it defines how much energy is needed to ignite the fuel. Fuels with a higher octane rating explode less easily and lets an engine run at a higher compression ratio.
So, in short, use the right type of gasoline for the best performance for your car. Putting 93 in a car that needs 87 won't make your car run better, and vice versa.
