I have a cat with very, very oily fur. I don't think I'm stripping him of anything.

If he is not grooming himself enough, which usually happens with overweight cats, he may have oil build up. Brushing him often will keep this oil down, as will using dry baths.
I still would not recommend baths more than twice a year.
