There are many reasons, but the simple explanation is that you do not wish to raise. Either because you have a poor hand, but since no bet has been made you don't need to fold. You might do this if you are trying to slow play your hand and some fool is doing all the betting for you. Or to see what your opponents do so you can possible gauge what kind of hand they have.

When you check, you bet zero dollars. There are tons of ways you can use it, but some examples include: * Using it as a trap to make your hand seem weak, and hope someone with a weaker hand than yourself plays into your trap and doesn't get lucky * If your hand is weak, and your opponents hand is weak, you can check to see if your hand develops and hope your opponents hand develops as well (but that he hits something worse than you). The pros look down upon checking, as it's a wasted turn in their eyes. However, if you're playing for fun it's really not that bad of a move and it's a cheap way to learn the playing style of other people there.

As Cyndimh said there are many situations when you might check but here's one: Provided that no one has bet in front of you, if you're sure you made the nuts you might want to give your opponent as many chances of making a hand as possible, so you let him get free/cheap (if someone else makes a weak bet that round, just call) cards on the turn and/or river. This is slowplaying, and can often turn against you, so that's why I said you have to be sure you made the best hand and don't need to protect it anymore.
