Yeah PipHalsey is right you press start, select equipment, select weapons, select melee weapons, highlight the sword and press a. This should equip it and it will become your active weapon. When you want to use it press the white button (like you do for all melee weapons).

I havent played Fable in while, but I believe you hit start to go into the menu, and equip the sword. Pretty much the same way in every RPG.
