Yep, its to do with the speed with which the mice move, I think!
I read somewhere that it's because they are afraid of the mice crawling up their trunks. I don't know how true that is but it kind of makes sense I guess.

Well, a lot of humans are startled and/or afraid of spiders.... so it doesn't surprise me. ;)

I just saw them testing the "myth" on Mythbusters. And every time, the elephants would back away from the mice.
