Strings break easily and no guitar could get through an entire performance without breaking a few; musicians keep freshly stringed guitars to avoid having to break up the performance; 2. Different guitars sound different; depending on the song being played, they might want a different character to the sound; and 3. Different songs are written and played in different keys; you want the instrument you play to be tuned to that key.
