Why are swords like scimitars and cutlasses curved? Wouldn't swords with straight blades be more effective?

they have different use in combat straight blade do more damage when trusting them inside your opponent and curved blade do more damage when you slash them so each one needs a different training .

A fighter who has the psyche to like one type will be more efficient in using it than the other type.

Curved blades are by and large cavalry weapons. The curved blade makes a better cut from horseback against lightly armoured opponents. Straight weapons are more optimal for infantry, and are in general more versatile.
