I HAVE to have spreadable butter, so I keep it out, but usualy have some in the fridge for baking and such as well. Took quite a while to train my husband not to put it in the fridge after use :)

I only use unsalted butter...so I usually keep it in the freezer with 1 package in the fridge that can be quickly softened.

Most of it is in the fridge , but I keep a few tablespoons at room temp for easy spreading.

We've always kept it in the fridge....I never knew you could keep it at room temp until I saw it at a friends house (this was years ago). I told my mother about it and she told me that keeping it out causes cancer. By the way....my mother says that everything she doesn't agree with causes cancer. She thinks it instills fear in her kids, even as adults. We don't have the heart to tell her otherwise.

Before the advent of "Refrigerators", it was commonly seen on the table, did duty as a "Burn Ointment" (sealed from bacteria) & Grandma would wash & dry the eggs then "Seal" them with Butter before placing them in a basket on the table. (Eggs shells are permeable letting air in & out). John

Both. I keep it in the frige, but have a butter dish that I keep at room temperature for "spreadabilty". Unless room temperature becomes too warm, like in the summer then in the frige.

Keeping it at room temp. was common in the old days esp. in a covered porcelain dish which kind of stays cool but leaves it spreadable.

I keep a stick in the fridge until about 15-30 minutes before I'm ready to use it. If I forget and take it out too late, then I use the knife edge to scrape thin peels off of the top of the stick. Cool butter seems to taste fresher to me so I don't like it to get too melty. :p
