Depends on what kind of flavoring you are after. You can take the meat off the bone if you wish, even marinate them and cook them on skewers over a fire for that grilled chicken taste. Or you could leave the leg whole, marinate it and roast it in the oven for about half hour. Then you could cut the meat off the bone and put it on your pizza. What flavors are you after? What kind of pizza are you aiming for?
