  • Anything that tastes crappy...then its probably low in carbs:-)
  • Berries are lower than most other fruits...strawberries, blueberries, raspberries...black and boysenberries too. Melons are also lower...all melons. Next would be apples (I think). Bananas and Oranges are on the high end. White or Russet Potatoes are HIGHER than Sweet Potatoes (isn't that strange....but it's true!) Corn is also high, as are Peas. Green beans sort of in the middle I think. Broccoli and cauliflower are low or at least lower. Cucumbers are pretty low I believe as well. Dark green leafy veggies may be lower still! Lettuces are fairly low...but avoid Iceburg as it also has NO real nutritional value to speak of. (Most Zoos won't even bother to feed Iceburg out to their lettuce eating animals because of it's poor offerings) Redleaf, Greenleaf, Romain,, Curly and Butter lettuces are much more nutrition for your buck (so to speak!) Milk...is also a Carbohydrate (surprise, surprise, lots of people don't know this...I didn't at one time...I'm diabetic so I had to learn this stuff!) All grains are Carbohydrates as well and generally speaking if you are shooting for lower Carbs you'll want to get the most out of your grains by eating WHOLE grains...NOT overly processed or WHITE (bleached) grains...brown rice over white...Whole Wheat or whole grain (mixed) breads. Also...if this is related to diet...if you eat a Protein WITH your carbs it is healthier, because the Protein will cause the Carbs to digest slower...thus releasing their sugar more slowly into your body...and avoiding those spikes in blood sugar that truthfully WE ALL should try to avoid! Gee is this the sliver lining to having Diabetics??? I know all this information at the drop of a hat now??? <wink> Note: All foods convert to sugar once digested.

  • Flax!! There is almost no usable carbohydrate in flax seeds. It is very high in both soluble and insoluble fiber (about one third of the fiber is soluble), and has a pile of nutrients to boot. Flax is just could be the ultimate low carb fiber source. And meats, eggs, cheese, seafood except oysters and mussels
  • The ones that will give you atherosclerosis if you eat them in abundance. :-P
